Yes, that is a statement I just made! I’ll have MUSHROOMS for dessert...and breakfast...and lunch...and dinner...and...and...LIFE!
Ok ok let me explain. I've fallen “madly in like” (I can’t use the big L word, because I’m not sure how they feel about me yet...time will tell) with Mushroom Matrix. Before I get too carried away with the “why” and “how” and oh-so-delicious recipe, let’s tackle the “what”.
Mushroom Matrix is a local San Diego game changer of a company focused on showcasing the power of the magnificent mushroom. Here’s a little background about their magical mushroom process as described to me:
"Our organic mushrooms are grown through full spectrum life-cycle at our Carlsbad, CA facility. We carefully dehydrate our mushrooms at low temperatures to retain all enzymatic activity and use UV light to increase naturally occurring Vitamin D. The result is a whole, raw food, gluten-free, non-GMO product with naturally occurring antioxidants and other vital nutrients. We are Certified 100% Organic and a Good Manufacturing Practices facility to ensure highest quality and efficacy."
Seriously, I asked for a tour and they said it was a clean and secure facility which basically means that I need to shower more(?) and they’re super serious about keeping their mushrooms clean and safe!
OK, now for the juicy details.
Let’s start with our first date. MM (Mushroom Matrix...stick with me here) liked a couple of my instagram photos and I was, well, intrigued, so I liked back. I then followed, and did what all normal people do...stalked the (insert desired expletive) out of them on social media. Ok, I was building up a crush. Next thing I knew I was sampling some of MM’s amazing products in my SPARKCYCLE classes - have your tried their NRG supplement powder yet? It’s the only #FISHMANFIT approved pre-workout supplement out there. ONLY ONE. #byebyeC4. Then I’m adding their Critical Care and Fit lines to every single one of my meals. Then I’m starting to feel straight up magical (get out of that gutter, you!). I’m talking more energetic, less groggy during my 6AM classes (join me at my next one, ok?), and just all around ninja-like.
And now, a hypothetical Q&A between myself and myself about Mushroom Matrix:
Q: I don’t like mushrooms
A: That isn’t a question.
Q: That is correct.
A: This isn’t working out very well.
Q: I mean, I don’t like the taste and texture of mushrooms so obviously MM isn’t a product for me.
A: Still not a question, but I can work with that. Mushroom Matrix is a Vegan, Gluten Free, Non GMO and Raw dehydrated mushroom powder that is literally flavorless. I tested this by eating a spoonful of it by itself. It tasted like nothing. It is made to add the awesome power of mushrooms to your desserts (see!), smoothies, soups, sauces and more!
Note to self: powdered anything should never be consumed by itself.
Q: That sounds so cool! What are your favorite ways to use it?
A: I’m happy you asked! I love to put it in things that might not normally get graced with mushrooms. For example: DESSERT!
Q: Do you have any dessert recipes you’re absolutely obsessed with right now?
A: Yes. YES. 100 PERCENT YES!
#FISHMANFIT Basically Vegan Black Bean Peanut Butter Brownies*
featuring Mushroom Matrix CARE Powder
Ingredients (all excluding Mushroom Matrix can be found at THRIVE MARKET):
1 15 oz. can (1 3/4 cups) black beans, well rinsed and drained
2 flax eggs (see instructions below) or 2 (definitely not vegan) plain eggs
3 Tbsp coconut oil, melted
3/4 cup cocoa powder (panic if it’s not organic, people)
1/4 tsp sea salt
1 tsp pure vanilla extract
1/4 cup maple syrup or agave (have you tried coconut nectar yet?)
1/4 cup + 2 tsp raw sugar or coconut sugar (my fave!)
1 1/2 tsp baking powder
1 tsp baking soda
2 tsp Mushroom Matrix CRITICAL CARE, FIT or BEAUTY powder (optional)
1/2 cup salted peanut butter - go for the creamy kind!
2 Tbsp powdered sugar (I used more mushroom matrix (!) because I like to avoid cane sugar as much as possible)
1/3 cup dairy-free semisweet chocolate chips (try my fave brand that is sweetened with stevia!)
Preheat oven to 350 degrees.
Lightly grease (go for the coconut oil!) a 12 slot cupcake tin.
Prepare flax eggs by combining ground flax meal (2 Tbsp) and water (5 Tbsp) in the bowl of the food processor. Pulse a couple times and then let sit for a couple of minutes.
Add remaining ingredients through Mushroom Matrix and puree until smooth (about 3 minutes)
If the batter appears too thick, add a Tbsp or two of water and blend again. It should be slightly less thick than frosting, but definitely not runny. Add almost all of the chocolate chips and stir together.
Distribute the batter into the muffin tins evenly and smooth the tops. Obviously I smoothed the tops with my finger - what’s the point of baking if you can’t sample the batter?
Measure out peanut butter in a mixing cup and add in powdered sugar or cornstarch. (The reason for this is to thicken up the PB and give it a little more texture!) Stir that up...with your finger?!
To the brownie pan, plop a dollop of the peanut butter mixture and swirl with a toothpick or knife. Sprinkle top with a few more chocolate chips or shaved chocolate.
Bake for 20-26 minutes. The top should be dry and the edges should start to pull away from the sides. The brownies should not get jiggy with it when shaken. Sorry Will Smith.
Remove from oven and let cool for 30 minutes in the pan before serving. They will be tender, so remove gently with a spatula or fork. If they're too tender, let set in the freezer to stiffen so they're easier to lift out. The insides are meant to be very fudgy and they’re vegan (or almost vegan) so there’s no need to worry!
Store in an airtight container for up to a few days. Refrigerate to keep longer.
